Oatmeal Mash-Up Cookies

I am taking a break from grading and creating work to share a recipe for cookies I made yesterday. Quaranbaking has been challenging since finding flour is hard and I have slowed down my normal pace. I had this idea that I wanted to start a home business called Emergency Cookies where I specialized in just four kinds of cookies and delivered them locally while they were still warm. If I can find a more reliable source of flour, I may do it, but for now I will work on perfecting some recipes.
Yesterday's cookies used a base recipe from Sally's Baking Addiction with my own changes. I was really happy with the results!
Oatmeal Mash-Up Cookies
(Based on Sally's Baking Addiction Oatmeal Scotchies)
3/4 c flour
1/4 tsp cinnamon
1/2 tsp baking soda
1 stick softened butter
1/2 c packed light brown sugar
1/4 c granulated sugar
1 egg
1 1/2 tsp molasses
1 tsp vanilla
1 1/4 c old-fashioned oats
1/4 c coconut
1/4 c chopped pecans
1/2 to 3/4 c white chocolate chips
Preheat the oven to 350 degrees. Line baking sheets with parchment paper.
Whisk the flour, cinnamon, and baking soda together. Set aside.
Cream the butter and sugars together in a mixer. (I melted my butter because I have no time/patience but it is better to use it softened.)
Add the egg and mix until combined.
Add the molasses and vanilla, also mixing until combined.
Add in the dry ingredients.
Add the oats, coconut, pecans, and white chocolate chips.
Scoop large tablespoons of dough onto the prepared sheets (I use a small ice cream scoop for that) and bake for 14 minutes.
I rotate them midway through.
None of my changes should be a reflection on the quality of the original recipe. I find all of the recipes I have used on that site to be amazing. This is just my own version based on my likes, extensive baking experience, and the things I had available.
